Castelnaudary, situated between Toulouse and Carcassonne in the heart of the Pays Lauragais, was built around a castle in the 12th century. Besieged twice during the crusade against the Cathars, the castle was razed in 1229. Catherine de Medici is making a Castelnaudary senechaussee whose headquarters will be the "Présidial. Criminal and civil court until the Revolution, it will only prison until 1926. Here the Canal du Midi will be inaugurated May 19, 1681 via a lavish ceremony on the Great Basin, the largest body of water (7 hectares) on the whole route along 240 km. The city that hosts the Foreign Legion since 1975, has about 12,000 inhabitants and is the world capital of Cassoulet dish celebrated annually on the last weekend of August.
