Originating in north India, the samosa is a flavoursome little crispy fritter, triangular in shape, containing a vegetable, meat or fish filling seasoned with spring onion, chili pepper, cumin, ginger and turmeric. The mixture is wrapped in a thin layer of wheat pastry - the famous filo pastry - before being fried in vegetable oil.
Delicious as an appetiser with a glass of punch or macerated rum, samosas flavoured with tasty Réunion spices can also be enjoyed as a starter, served with a salad and a spicy sauce!
