Belflore is a speciality cake created in 1993 by an association of bakers and pastry chefs in the Territory of Belfort, in order to celebrate the tenth anniversary of the Belfort flower market. It's a delicious cake comprising a bed of flavoured raspberries topped with almond meringue, sprinkled with hazelnuts. The end result is light and fragrant, and lovers of sweet foods enjoy it for dessert or at teatime, with a glass of champagne or a cup of coffee.
