A fairly old dessert which is difficult to make in its original form, Tourtièreis an apple or prune cake, flavoured with armagnac, made of many fine layers of buttery, sweet pastry. To make this very light-textured cake, you need flour, salt, butter, eggs, sugar, water, armagnac or rum, and fruit of course. Today, to make the recipe easier, some of the pastry layers are replaced by prunes or apples cut in slices.
