The gâteau à la broche is a traditional spit cake speciality of the Bigorre area. It is made by applying layer upon layer of batter to a spit and cooking it in front of a fire. Delicious plain, it can also be eaten with honey or jam.
Every July, a spit cake festival is held by its own special brotherhood in the town of Arreau. It's a chance for newcomers to sample this unique dessert.
