Goat's cheese is a speciality of the Indre-et-Loire and more especially of the city of Sainte-Maure-de-Touraine. Made in this area, sainte-maure-de-touraine is a goat milk cheese carrying the AOC quality label, which is recognisable by its bluish grey rind. It tastes great served with a good farmhouse bread and with a glass of Touraine red wine.
