The first record of Sablé-sur-Sarthe shortbread (petit sablé) dates back to 1670, but it's thanks to the pastry chef Yvon Etienne, who filed the patent in 1924, that this delicious all-butter biscuit became such a success.
Round, golden and crunchy, Sablé shortbread is now available in several flavours and has become the town's most famous delicacy. Made with wheat flour, fresh butter, sugar, eggs, salt and milk, it's most often enjoyed with a cup of coffee or a nice bowl of hot chocolate!
