Also called picoussel, pounti is a peasant dish from Cantal. This recipe combines sweet and savoury flavours to perfection, and is easily transportable, making it one of the favourite dishes of shepherds and other farmers in the past.
Pounti is a kind of cakemade from wheat flour, eggs, milk, chard leaves, bacon and prunes. Once made, it is cut into slices and fried until golden brown in a hot pan. In general, it is served with a green salad to add a lighter touch. The pounti is also an excellent accompaniment to poultry or other white meat.
A nice chilled white wine, such as a Saint-Pourçain for example, makes a welcome accompaniment to this Cantal cake.
