Piperade is a mixture of sweet green peppers, tomatoes, onions and Espelette chili peppers. This colourful, flavourful dish is ideal with meat, fish, eggs, country ham or sheep's cheese. It comes from the Basque province of Soule, where it is prepared with leftover stale bread. When Bayonne ham is added, we call it piperadebasquaise.
Every year on 15th August, Salies-de-Béarn holds the Piperadère. This is a big culinary contest where various teams are pitted against each other. There is also a variety of entertainment and tastings organised for the festival.
