With its many varieties of apples which are famous for their quality and flavour - Belle de Boskoop, Cox Orange, Elstar, Jonagold, Melrose and Reine des Reinettes - Normandy, the land of gastronomy and the good life, offers many apple-based specialities. The most famous include Norman tart (shortcrust pastry covered with applies and a topping made with crème fraîche, eggs, sugar and Calvados), Norman bourdelot (apple flavoured with Calvados and wrapped in flaky pastry), apple juice, cider, Calvados (a cider brandy) and pommeau, a sweet, fruity aperitif made of Calvados and apple must.

Normandy apples are also ideal for making unusual savoury-sweet dishes, such as duck aiguillettes with caramelised apples, apple tarte tatin with Camembert, or more traditional dishes like veal escalope, Normandy-style - with its sauce made of cider, Isigny cream, mushrooms and Calvados, it's a real treat!
