Also called landaise platter (assiettelandaise), landaise salad is a dish eaten as a hors-d'oeuvre or a main meal in the Landes of Gascony. This dish is remarkable for its mixture of hot and cold ingredients.
In general, landaise salad usually has a green salad, sweetcorn, tomatoes and sometimes pine kernels. Warm ingredients are added to this, such as gizzard or duck breast. Bayonne ham is often used, as are bacon pieces, croutons, hard-boiled eggs and asparagus. A delicious medallion of foiegras can also embellish this very comprehensive dish.
