A great cheese speciality from Jura, Jura fondue (fondue jurassienne) is made from a combination of three types of comté cheese -new, less new and aged - which brings fruity and floral tastes to the dish. The recipe also needs Arbois white wine, garlic and marc égrappé liqueur. Firstly the garlic is rubbed over the fondue pan, which is heated before adding white wine. Then, little by little, pieces of comté are added, stirring all the time. Once the mixture is well melted together, and after having added the marc, all you have to do is dip in delicious chunks of country bread!
An ideal dish for sharing in winter, Jura fondue goes perfectly with a Savoy wine or a white Jura wine.
