Essay white puddingwas inspired by the pudding of Rethel, in Ardennes. It was first made in 1881 by the pork butcherHippolyteBrière, who got the recipe from a fellow prisoner of war in 1870.

Cream and slightly pink in colour, Boudin Blanc d'Essay has a fine texture and is full of flavour. It is made from a mixture of finely-minced pork, whole milk, eggs, and flavourings which is introduced into a sausage skin. Traditionally it is served grilled, during the Christmas period.

The Confrérie des Compagnons du BoudinBlanc organises a contest every autumn at Essay, to find the best Boudin Blanc.
