Creusois melt (fondu creusois) is a typical dish from Creuse, not to be confused with Creusois fondue (fondue creusoise). The recipe consists mainly of low-fat mountain cheese, which can sometimes be replaced by two camemberts.
We begin by removing the skin from the cheese before cutting it into thin slices. Then we boil peppered water in a fondue pot previously rubbed with garlic, before adding the cheese slices. Once it has melted, we add the butter, liquid crème fraîche, egg yolk and finally, a little flour.
In general, fondu creusois is served with chips or fried potatoes. Potatoes in their jackets were once used. It is usually served with a plain omelette and sometimes a green side salad. The melted cheese is poured onto the side of the plate, not onto the potatoes,when enjoying this complete meal.
