A Catalan culinary speciality, cargolade consists in grilling snails in their shells over a wood fire. The shells are filled with melted lard using a cast iron funnel during cooking. This dish is traditionally eaten standing up, with a slice of bread spread with aioli and a glass of Catalan wine, making it great for sharing at parties!
Every year at the end of July, the town of Bompas hosts a Snail Festival. For three days, the town throws a wild fiesta. You can enjoy delicious cargolades, watch an aioli-making contest and enjoy a wide range of entertainment.
