A traditional Belgian dish, carbonadeflamande was quickly adopted by the Nord-Pas-de-Calais. This delicious dish is made from tender pieces of beef, onions, beer and soft brown sugar.
Firstly, the pieces of beef are browned and put with slices of fried onion, and this is sprinkled with soft brown sugar to sweeten the dish lightly. Then the dish is covered with brown or amber beer and slices of country bread or gingerbread, spread with mustard, are added. The ingredients are left to simmer together for at least three hours at a low heat.
Traditionally, carbonadeflamande, which is even better the next day, is served with homemade chips and a nice glass of local beer!
