A typical dish of the Basque country, Basquaise chicken is quite a simple recipe of chicken pieces fried in olive oil with mild chili or sweet peppers, tomatoes, onions, a little dry-cured ham, white wine and the famous local Espelette pepper.
Originally from the province of La Soule, this fried chicken recipe gradually won over the whole of France, eventually appearing on the menus of the greatest restaurants. Basquaise chicken goes wonderfully with a glass of red Irouléguy wine.
