Developed in antiquity, it forms a first medieval village in the twelfth century, before experiencing a real breakthrough in the fifteenth century with the beginning of the exploitation of stone quarries. Founded in 1790, the town of Fontvieille has gradually become an important agricultural city and now has several AOC and AOP as the wine of the Alpilles, the olive oil of the valley of Baux-de-Provence, or the wines Coteaux-des-Baux-de-Provence.
