Domaine Souviou is located near the village of Le Beausset and covers 75 hectares of vineyards, olive trees and forest overlooking the Mediterranean Sea. Sage, cultivated in quantity in Souviou since ancient times, gave its name to the valley Sauvi means "Sage" in Provencal. It is a place rich in history and a true conservatory of 7000 olive trees that stand majestically on restanques whose 200 subjects are millennia old. Since 2011, the Domaine Souviou is the property of Roger Jaar, polytechnicien and international entrepreneur, in love with Provence and who is committed to preserving this exceptional terroir. This wine lover has undertaken the restoration of the cellars, the construction of an oil mill and the creation of new sales and reception areas. The Domaine thus produces its own wines in Bandol and Côtes de Provence Appellation, as well as its extra virgin olive oils. In addition, Souviou is a natural amphitheater with a clay-limestone soil composed of dry stones in terraces. The harvest is manual and the yield is limited to 40 hl/ha. The reasoned culture is practiced in respect of the environment. The Domaine also has its own oil mill, which allows cold extraction as soon as the harvest is done.
