Gastronomic speciality of Limousin, the young veal requires a very particular breeding. The young veal must be indeed brought up throughout its life to the udder of its mother. This one is generally of Limousine race. In Brive-la-Gaillarde, the festival of breeding and young veal brought up under their mother is organized every year the last weekend of August.
The "tête de veau" (veal head) is a very typical dish of Limousin.
