Cultivated in Toulouse since the 19th century, violet is a delicate flower, full of charm, and with a subtle flavor. Its flower is used in numerous domains, such as perfume, candies and cakes. When cooked, the violet brings an original fragrant and colourful touch to the most diverse preparations, such as fruit salad with jam, mixed salads and dishes based on meat.
Violet liquor, crystallized violets and the delicious violet candies are all specialities of Toulouse.
In February, the violet festival in Toulouse honors this famous fragrant flower.
