Valençay is an unpasteurised soft goat's cheese with AOC status made in the Berry province. This truncated pyramid-shaped cheese is matured for at least 11 days and has a bloomy rind that is dusted with charcoal. It tastes particularly good with a glass of red, rosé or white Valençay wine.
