Grown on the Tarbes plain, the Tarbais bean is a white bean with a fine skin, delicate texture and creamy flesh. Awarded both the Label Rouge (red label) and Indication Géographique Protégée (IGP: protected geographical indication) quality marks, this pulse has many nutritional properties and is used in numerous recipes, including garbure (preserved goose soup) and cassoulet (preserved meat and bean stew).
