The herb quality in the high meadows of the Savoy and the Upper Savoy allows the Tarine and Abundance cows to produce a milk of excellent quality to produce cheese. In the Savoy, the cheeses carrying the AOC quality label are beaufort, nicknamed the prince of Swiss cheeses, and tome des Bauges, made in the Bauges massif. In the Upper Savoy, the cheeses carrying the AOC quality label are reblochon and abundance. On top of these local cheeses, the Savoy emmental, the chevrotin and the Savoy tomme are produced in both départements. |
