The quality of the grass in the high meadows of the Savoie and Haute-Savoie means that the Tarine and Abondance cows produce milk of an excellent quality for cheese production.
In the Haute-Savoie, the AOC cheeses are Savoie Reblochon and Abondance.
In Savoie, the AOC cheeses are Beaufort, nicknamed the “Prince of Gruyères”, and Tome des Bauges, made in the Bauges massif. In addition to these are Emmental de Savoie, Chevrotin and Tomme de Savoie, which are produced in both départements.
