The speciality of the town of Romans is ravioli, small squares of fresh tender wheat flour pasta stuffed with Comté cheese, fromage blanc, eggs, parsley, butter and salt. The preparation is then presented in sheets of 48 small squares. Raviolis can be served plain, au gratin or with meat or fish. Delicious!
