One of the culinary specialities of the Pyrénées-Atlantiques is Ossau-Iraty, a cheese made in the same way it has been for hundreds of years using milk only from Basco-Béarnais or Manech ewes with black or red heads. It is a lightly pressed and uncooked cheese with a natural orange yellow or grey rind. Made in an area covering the Pyrénées-Atlantiques and a small part of the Hautes-Pyrénées, Ossau-Iraty is recognised with the AOC quality label.
