The Baux valley and its fields of olive trees is famous for its olive oil carrying the AOC quality label. Located at the entrance to the Baux valley, Mouriès is France's leading oil-producing commune. The cultivation of olive trees is honored there during the green olives festival.

The town of Maussane-les-Alpilles, with its 400,000 gallons of oil per year, is one of the largest producers of olive oil AOC France. The taste of oil, surprising and unparalleled flavor is obtained by a subtle blend of five varieties of olives in the valley of Les Baux: Salonenque, Aglandau, Grossane, Verdale and Picholine.
