Speciality of Limousin, the milk-fed veal requires a very particular breeding. The milk-fed veal must be fed throughout its life by its mother's udder. This one is generally of Limousin breed. In Brive-la-Gaillarde, the milk-fed veal breeding festival is organised every year the last weekend of August.
Tête de veau (calf's head) is a very typical Limousin dish.
