This renowned cheese resulting from the city of Epoisses would have been conceived by Cistercian monks of the 16th century. Carrying the AOC quality label today, Epoisses is a cow cheese with a soft dough. Its crust is washed with Burgundy marc. The taste of this delicious cheese varies according to its degree of maturity.
