This renowned cheese from the town of Epoisses is thought to have been created by 16th-century Cistercian monks. Epoisses is a soft cow's cheese and today carries the AOC quality label. Its rind is washed with Marc de Burgundy spirit. This delicious cheese varies in taste according to its maturity.
