Dauphiné ravioli have been awarded the Red Label for quality and are covered by a Protected Geographical Indication. Famous for being delicate and melt-in-the-mouth, they consist of small squares of fine wheat pasta stuffed with a mixture of fresh fromage blanc, Comté and Emmental cheese, egg and parsley that has been sautéed in butter. The ravioli cook very quickly – just one minute in a pan of boiling water or chicken stock!
These ravioli are delicious on their own, or with a knob of butter, a dollop of crème fraîche and some grated Gruyere cheese. They can also be baked au gratin, fried (as an aperitif snack!) or served with meat, fish, foie gras or truffles for a scrumptious treat that youngsters and adults alike will enjoy.
