Produced in the Jura, the Doubs and the Ain, Comté is a delicious cheese carrying the AOC quality label. It is a cooked, pressed cheese made from unpasteurised cow's milk. It is matured in cellars for at least 4 months and up to 36 months!
Many of the Jura cheese dairies where Comté is made are open to the public and show visitors the various stages involved in producing this famous cheese.
The Comté House in Poligny offers a museum dedicated to this famous speciality of the Jura.
