Chaource, a village in the south of the Aube, is famous for its cheese carrying the AOC quality label. Slightly salted, chaource is a soft cheese made with unpasteurised cow's milk. The mushrooms fondue with chaource is a local speciality.
To know more about it, the museum in the village offers a film about chaource, as well as an exhibition of objects linked to the manufacturing of the cheese.
