The Aube is the second French producer of cabbage for sauerkraut after the Bas-Rhin in Alsace. This vegetable is grown in particular in the Brienne-le-Château plain. The champagne or cider sauerkraut are the Aube specialities to be discovered.

In September, a Sauerkraut festival takes place in Brienne-le-Château.
