Bethmale is an unpasteurised cow's milk cheese with a pressed curd that originates from Le Couserans in the Ariège Pyrenees. Matured in a traditional way, this fruity and creamy cheese goes wonderfully with a slice of bread and a glass of red Madiran wine.
