This cake of rustic origin is an obligatory speciality in the Basque Country. Made with pâte sablée – a rich, sweet shortcrust pastry – the cake traditionally featured a black cherry filling. As these fruit are rare today, the cake is most often filled with almond-flavoured confectioner's custard. Delicious!
