The baeckeoffe, meaning oven of the baker, is a very famous dish of Alsatian cuisine. It consists mainly of three marinated meats (beef, pork and lamb) and potatoes cooked with Riesling wine, garlic, onion and herbs. All this should then simmer in the famous Alsatian casserole dish for three hours.
Formerly, on washing days, this dish was cooked directly at the baker's and collected three hours later.
