At an altitude of 1000 metres, the Aubrac region is a vast high plateau of meadows that is very snowy in the winter.
Every May the transhumance festival takes place here, in Aubrac, when the prairies are green and covered with thousand flowers. After a rigorous winter, cows go out of their cowshed. They are then led towards the high meadows of Aubrac where they will spend all summer. One Sunday is dedicated to this festival, cows are then adorned with flags, bells, and bunches of flowers. At the end, the most beautiful herd is rewarded by a jury. Aligot, the speciality of the Aubrac high plateaux, is then prepared to celebrate this event.
