The mountain pastures of the Savoie and the Haute-Savoie are inextricably linked with two local cattle breeds: the Tarine, a rustic dairy cow with a fawn coat, and the Abondance, a dairy cow with a white head and light-coloured horns. Transhumance, the ancient tradition of leading livestock to summer mountain pastures, takes place in the spring. The high meadows provide all the necessary conditions for the cows to produce milk of an excellent quality which is then used to make famous Savoie cheeses.
