Delicious recipe of the Aubrac region high plateaux, this speciality is the traditional dish of the shepherds. A quick cookery lesson is called for: Aligot consists of mashed potato that we mix with some butter, milk, cream and melted fat. Finally added to this preparation is the famous fresh tomme cheese which will give to the aligot its so well-known consistency. Ideal for the cold winter evenings.
