Saint-Hippolyte is a municipality located in the department of Pyrenees-Orientales and region of Languedoc-Roussillon. Its inhabitants are Hippolytains.

Between the Mediterranean Sea, the pool of salsa, plain of Roussillon and the Pyrenees, Saint Hippolyte is a small coastal town semi existed since ancient times.

The village is located in Salanque, eight miles north of Perpignan. The Salanque from "Sal Lanque" or "salted land", in reference to wetlands.

Saint-Hippolyte is part of the canton of Saint-Laurent-de-la-Salanque.

First near the pond, people have gradually refocused around the old medieval castle and its dependencies. The old village was owned by the Templars. The castle has two towers that still stand today.

The village has grown since ancient times, it was a station of the Domitian created by the Romans in 118 BC. The first houses were built around Milepost that marked this way. This terminal is always visible in the current church.

For centuries people have exploited the various resources of the pond. Besides fishing, still practiced today, the salt is repeatedly mentioned in medieval texts. Until the 20th century, practiced the breeding of sheep pre-salted. In the 18th century, the western part of the territory was already covered with vines.
