Gundolsheim appears in the 8th century as a possession of Etichonids, dukes of Alsace in the Merovingian era. The village was probably surrounded by an enclosure in the Middle Ages, but the remains are few. Today we still see an old door village street Merxheim, whose walls are joined to houses 13 and 14 of this street.

Two noble families each had their Gundolsheim castle from the 13th century, but there is no further trace of these buildings today. The profile of the village and the Romanesque bell tower reminiscent of the medieval origins of Gundolsheim.

One of its specialties is the delicious gourmet asparagus Alsace (season from mid-April to mid-June).

Church Sainte-Agathe: the old Romanesque church and the cemetery that were surrounded fortified. Only the bell tower of the 12th century remains of this church which was then incorporated into the college of Lautenbach. Built in pink sandstone, it is square and solid in its lower part and provided with loopholes. The upper part is octagonal, two-story windows pierced with twin columns with cubic capitals. The tower is accessible from the east side by a gate semicircular transoms decorated with ornaments of embossed strip half-circles intersected. The cover is formed by an arrow masonry of more recent times.
