  • The development of the Pays d'Auge cider: Apples are picked by hand, then stored for several weeks in dry, sheltered from the air. They are then crushed to extract the pulp which is left to macerate for color and flavor. The next step, pressing, is done very slowly to get the wort to be stored in tanks. Performance is limited to 750 liters of juice. On the surface of the tank develops a thick brown liquid, called the brown hat. The fermentation takes place under the watchful eye of the cellar master who ensures a fair balance between the flavors (sweet, sour, bitter). Cider gradually becomes clearer. It is then bottled with a foam least 6 weeks and kept in a cool cellar.
  • The Art of Wine Tasting: cider AOC Pays d'Auge is the subject of a visual, olfactory and gustatory. Its foam is thin, white and persistent. The color is intense with a hint or orange-yellow amber. His nose is powerful, complex and varied. The products mainly young emit fruity aromas (apple, citrus), floral (lime, anise), sugar (caramel, honey) or dairy (butter free).
