• Specialty of the town: the Oignonade Auxonnaise:

• Recipe for 8: 8 onions, 1 bottle white grape of Burgundy, 2 dl of olive oil, balsamic vinegar 30 cl, 1 liter of chicken stock, 2 tablespoons of tomato paste, ½ liter cream, 250 g of butter, salt, ground pepper, coriander. 16 slices bread, 8 slices of ham cut in two, 16 poached eggs, 16 potatoes, steamed.
• Cooking onions: Peel the onions and sauté in olive oil. Degrease and deglaze with the vinegar, reduce, then add white grape, reduce, add the tomato paste and chicken stock, salt, pepper, coriander and onions to cook slowly, covered, for 1:30 / 2am (we check cooking the onion in spicy).
• Sauce: After cooking the onions, remove them by taking a little cooking liquid. Reduce the cooking liquid remaining three quarts, add the cream, simmer for twenty minutes and then whisk the butter, adjust seasoning.
• Reheat the onions in the pan juices.
• Brown the bread slices in a little oil and butter, and place a half slice of ham and poached egg.
• On a plate, place an onion, two slices of bread topped then top with sauce.
• Place two potatoes per person and sprinkle with chopped parsley.
