This speciality of Ardèche and Drôme is a soft little goat's cheese made from whole milk, and enjoys AOP status. According to your preference, you can eat it more or less mature: fresh, creamy, half-dry or dry. This delicious cheese, with a distinctive subtle taste, can be eaten cold or warm with a salad dressing made with walnut oil, for example, and it can also be used in many gourmet recipes!
