A magnificent Albigensian bastide in Tarn, one of the oldest such fortified towns in Occitanie, Cordes-sur-Ciel boasts an exceptional Gothic heritage in which all phases are represented: 13th-century Primitive, 14th-century Radiant and 15th-century Flamboyant. Founded in 1222 by the Count of Toulouse Raymond VII, it has kept all of its authentic character, to which it owes its charm. A walk in the medieval town is a real enchantment, especially as the streets are lined with craft shops and artists' galleries.

Cordes-sur-Ciel is a town that is best explored on foot in order to appreciate all the beautiful sights that you will see. Along the steep, cobbled streets, you will be instantly immersed in a medieval atmosphere: fortified doors, ramparts and carved Gothic façades, a real trip back to the Middle Ages! The upper town still has some superb Gothic residences, including the Grand Falconer's House, the Grand Squire's House, the Grand Huntsman's house, famous for its carved hunting scene, and the Prunet House. The latter houses the Museum of Sugar and Chocolate Arts created by Yves Thuriès, winner of the Meilleur Ouvrier de France craftsmen's competition. For breathtaking views, stand at the top of the ramparts and be amazed by the superb views over the Cérou Valley!

In July, for two days, the Grand Falconer's festival will sweep you away to the medieval world, with a programme including a banquet in period costume, a ball, a medieval market, parades and other activities from days gone by. Visitors with a sweet tooth will go crazy for croquants de Cordes. Made from almonds, egg whites and sugar, they are a real treat for your taste buds!

Its exceptional location, its remarkable architectural heritage make it one of the most significant of France and one of the landmarks of European heritage medieval towns. Today it is ranked among the Great Sites of Midi -Pyrénées !

One of its culinary specialties such as crisp, subtle blend of sugar, egg whites, flour and almonds, comes from the Middle Ages. It is found in all good pastries cordaises. Located on the AOC Gaillac wine is also a specialty of Cordais Country. Always winemakers were careful to choose the most suitable varieties to climate and land to produce a quality wine keeping all its specificity. Some varieties are typical in Gaillac vineyards : mauzac the ondec and " in the el " (pronounced " lindeloeil " ).
