In July, for two days, the Grand Falconer's festival will sweep you away to the medieval world, with a programme including a banquet in period costume, a ball, a medieval market, parades and other activities from days gone by. One of its culinary specialties such as crisp, subtle blend of sugar, egg whites, flour and almonds, comes from the Middle Ages. It is found in all good pastries cordaises. Located on the AOC Gaillac wine is also a specialty of Cordais Country. Always winemakers were careful to choose the most suitable varieties to climate and land to produce a quality wine keeping all its specificity. Some varieties are typical in Gaillac vineyards : mauzac the ondec and " in the el " (pronounced " lindeloeil " ).
