Served as a starter, side dish or sandwich filling, this vegetable-based preparation is a speciality of Réunion and its neighbour, Mauritius. This typical Creole recipe consists of green beans, chayote, carrots and finely cut white cabbage, which are blanched then fried in a pan before being macerated in a vinaigrette seasoned with ginger, chili pepper and turmeric.
