Originally from Haut-Rhin, Sundgau fried carp is a very popular speciality in this part of France. It even has its own Fried Carp Route, an itinerary featuring the best inns that serve this flavoursome dish.
Usually served with chips or potatoes, Sundgau fried carp is first marinated then breaded with semolina. It is then dipped twice into very hot oil before being served with a green salad. It can also be served with lemon juice or mayonnaise, for a more indulgent dish. The very tender flesh contrasts with the delicious crispy coating, and people traditionally eat fried carp with their hands.
Besides being delicious and succulent, this speciality also has the nutritional benefits of carp, rich in omega 3 fatty acids.
The village of Munchhouse puts on a fried carp festival each year, in the first fortnight of August. It's an opportunity to enjoy musical entertainment and enjoy this iconic dish from Sundgau!
