In Sarlat, the capital of Black Périgord, foie gras is celebrated during the first weekend in March. On Place de la Liberté there is a big traditional market promoting regional products and of course foie gras, the region's speciality.
Many activities are organised, like a big banquet with all-you-can-eat foie gras, cookery demonstration workshops for children and adults, and bandas to liven up the atmosphere. A Périgord-style carcass soup is offered to everyone at the market so that visitors can discover the riches of traditional goose cuisine. Many other fatted goose specialities are also showcased during the banquet, like grillon pâté, stuffed neck, breast, aiguillettes (thin strips of meat), stew or duck pot-au-feu. The banquet is attended by over 800 guests. Throughout the festivities, flocks of geese are also guided around the medieval city.
